Ribolla Gialla «A Tessa»

When sea spray and grated lemon zest meet

Piaceres! May we introduce you to the unusual and at the same time enormously refreshing sparkling wine from the house of I Clivi: The RBL (or: R_B_L)! For this wine, Mario Zanusso and his team have once again reached into their bag of tricks and once again convince with the balancing act between innovation and tradition. From the Ribolla Gialla grape, which is indigenous to Friuli, they produce a sparkling wine that undergoes only one fermentation.

For the production of Ribolla Gialla, the grapes are fermented in a steel tank with their own yeasts. The tank remains open until the residual sugar content has dropped to around 25g per liter. The tank is then sealed to build up pressure and release the carbon dioxide in the wine. As soon as the pressure of approx. 6-7 bar is reached and only a very small amount of residual sugar is left, fermentation ends. The wine is then allowed to rest and mature on the lees for a few more months before being bottled (under pressure).

The RBL is a "Brut Nature" (residual sugar: 1.6 g/l) and therefore bone-dry. Due to its shortened tank fermentation process, however, it has such fresh fruit that it outstrips every lemonade on hot days (or hot parties). Aromatically, the lemon peel is at the center of the action. Rounded off by a strong minerality and saltiness, which reminds us of the unmistakable scent of a sea spray and therefore immediately puts you in a holiday mood.
