A symbiosis of Franciacorta and Sauternes
Strictly speaking, Essenza is a sparkling wine by definition. In fact, however, Santus invented a wine that is unique in the world and that we would call a “sparkling sweet wine”. Santus brings together the production process of the most notorious sweet wine in the world, Sauternes, and the classic bottle fermentation method for sparkling wines.
The noble rot Botrytis, which is wanted for this wine, develops most reliably in periods in which morning fog is followed by a warm, dry day. That is why this wine is only made in years when these climatic conditions are met over a longer period of time. The grapes affected by noble rot naturally produce the complex and concentrated sugar and grape aromas that make up this wine. The idea of combining these aromas with the aromatic notes of a bottle-fermented sparkling wine was brilliant. A stroke of genius!
Some of the diverse flavors of this unique wine are saffron, apricot, honey, passion fruit, vanilla, toast and caramel.

Das Weingut Santus wurde in den 1990er-Jahren dank des Traums von Maria Luisa Santus und Gianfranco Pagano gegründet, die das Weingut auch heute noch gemeinsam führen. Romantischer könnte die Geschichte kaum sein, denn sie haben sich bei einer önologischen Weiterbildung kennengelernt.
Bei Santus stehen vom Design bis zum Rebberg zwei Prinzipien im Vordergrund: Ein moderner Stil und die Nähe zur Natur. Sei es das Etikettendesign, die Kleiderwahl Gianfrancos oder die moderne Architektur des knapp 10 Hektar grossen Weinguts, alles ist in einem eleganten modernen Stil gehalten.
Darüber hinaus ist das Bio-Weingut Santus der Nachhaltigkeit verpflichtet und arbeitet zum Beispiel im Rahmen des “Biopass Projekts” mit der Universität Mailand zusammen, um die Qualität der Böden zu verbessern. Ebenso ist das Weingut energieautark dank der intelligenten Temperatursteuerung im Innern des Kellers sowie der Solarpanels auf dem Dach. Alle Weine von Santus sind von einer Qualität, die man nur mit Superlativen beschreiben kann. Bei Santus wird nichts dem Zufall überlassen!
