Franciacorta Dosaggio Zero
A sparkling wine like magical glacier water
“Our Dosaggio Zero embodies our terroir like no other wine, I would take this wine with me to the infamous desert island,” Gianfranco Pagano from the Santus winery told us when we visited there in summer 2022. You really seem to feel the morainic soil from glacial deposits when you enjoy this wine. A wine that goes as deep as a deep breath at the edge of a glacier several thousand meters above sea level.
The Dosaggio Zero is the driest style for a sparkling wine. The designation means that a sparkling wine must not have more than 3g/L residual sugar and, above all, that no sugar may be added to the "dosage" after bottle fermentation. This Dosaggio Zero made from 70% Chardonnay and 30% Pinot Noir is even shown to have a residual sugar of less than 0.5g/L. A sparkling wine that couldn't be drier!
This wine is a monument. Its long time in the bottle gives it the beautiful toasted notes, at the same time it convinces with a mixture of aromatic notes of oyster shells, honey and lemon.

Das Weingut Santus wurde in den 1990er-Jahren dank des Traums von Maria Luisa Santus und Gianfranco Pagano gegründet, die das Weingut auch heute noch gemeinsam führen. Romantischer könnte die Geschichte kaum sein, denn sie haben sich bei einer önologischen Weiterbildung kennengelernt.
Bei Santus stehen vom Design bis zum Rebberg zwei Prinzipien im Vordergrund: Ein moderner Stil und die Nähe zur Natur. Sei es das Etikettendesign, die Kleiderwahl Gianfrancos oder die moderne Architektur des knapp 10 Hektar grossen Weinguts, alles ist in einem eleganten modernen Stil gehalten.
Darüber hinaus ist das Bio-Weingut Santus der Nachhaltigkeit verpflichtet und arbeitet zum Beispiel im Rahmen des “Biopass Projekts” mit der Universität Mailand zusammen, um die Qualität der Böden zu verbessern. Ebenso ist das Weingut energieautark dank der intelligenten Temperatursteuerung im Innern des Kellers sowie der Solarpanels auf dem Dach. Alle Weine von Santus sind von einer Qualität, die man nur mit Superlativen beschreiben kann. Bei Santus wird nichts dem Zufall überlassen!
